  • SOUS CHEF BAKERY

    JOB DESCRIPTION

    1. Responsible for supervising the food production for the bakery section. Produce all baked goods but not limited to: artisan breads and rolls, lavosh, muffin, laminated danish, laminated croissants and doughnuts.
    2. Ensure that all food items prepared are in accordance with the menu specification and Hygiene and Safety standards.
    3. Oversee the production of all bakery products, ensuring that the required and finished products are produced and kept in the appropriate areas.
    4. Ensure that assigned staff receive and follow given recipes and methods keeping wastage to a minimum.
    5. Make sure that all assigned production staff carry out their duties in a set time frame.
    6. Assists in the development and implementation of new dishes.
    7. Maintain a proper stock rotation and manage on time deliveries.
    8. Comply with the company occupational Health & Safety Policy.

     

    REQUIREMENTS

    1. Minimum of three (3) year’s progressive experience as a Sous Chef Bakery a 4 star kitchen with demonstrated hands on experience in the Bakery section within a Hotel/Resort/Restaurant/InFlight Catering operation.
    2. Diploma III in Hotel/Catering Management or equivalent qualification.
    3. Ability to work and perform under significant pressure.
    4. Anticipates customer needs; keeps customers abreast of relevant changes; distributes helpful information.
    5. A professional manner with the ability to meet targets and achieve results.
    6. Must be detail oriented, strong planning and organizational skills with the ability to multi-task and manage time effectively.
    7. High level commitment to continous improvement and adaptability to change.

  • SOUS CHEF PASTRY

    JOB DESCRIPTION

    1. Oversees and directs all aspects of the kitchen operation, providing functional assistance and direction, and coordinates functions and activities.
    2. The Pastry Chef is accountable for the quality and consistency of all pastry products produced and served including the efficiencies, consistency, associate training and accountability of cost associated with the pastry department.
    3. The Pastry Chef work directly with the Executive Sous Chef on the creation, development and implementation of new desserts and creative menu development.
    4. Ensures that all food products prepared meet the established specifications and standards.
    5. With a “Hands on Approach” assigns tasks effectively for the efficient use of allocated labor ensuring maximum results are achieved and daily production needs have been met in a timely, organizes and efficient manner.
    6. Seeks to maintain knowledge of industry trends in the world of pastry.
    7. Facilitates all health, safety, sanitary rules, regulations and standards according to health department and risk management are enforced and followed correctly.
    8. Other duties as assigned.

     

    REQUIREMENTS

    1. Minimum of three (3) year’s progressive experience in the Pastry Department within a Hotel, Resort, Restaurant or InFlight Catering Operation.
    2. Two year’s as a Sous Chef Pastry in a high volume, multi-outlet hotel/restaurant/InFlight Catering with centralized pastry production kitchen.
    3. Ablity to present at work for assigned schedule including, nights, weekends, holidays and extenden hours when required.
    4. Fully competent in all aspects of pastry.
    5. Proficiency with English, strong oral and written communication skills.

  • SOUS CHEF COLD KITCHEN

    JOB DESCRIPTION

    1. Responsible for assisting in supervising food preparation and prodcution for the cold kitchen section, as per set standards and procedures while ensuring adherence to the menu specification and hygiene and safety standards.
    2. Ensure that all assigned production staff carry out their duties in a set time frame.
    3. Ensure that assigned staff receive and follow given recipes and methods, wastage is kept to a minimum.
    4. Monitor regular standards of production to ensure highest level of quality.
    5. Perform daily inspection on all kitchen, cold rooms, food storage rooms and equipment.
    6. Maintain an accurate stock rotation and manage on time deliveries.

     

    REQUIREMENTS

    1. At least three year’s experiences in quality establishments along with excellent culinary skills.
    2. Minimum Diploma III hospitality or catering management or equivalent qualification.
    3. Cold kitchen experience in either a hotel, resort or quality restaurant (preferably with an airline company).
    4. Must be detail oriented and able to manage competing priorities and multiple deadlines in a fast paced environment.
    5. Ability to easily adapt to organizational and environmental changes.
    6. Excellent communication skills, both written and verbal.

    1. Accepts responsibility for the activities of Sous Chef Hot Kitchen – Europe Culinary, catering events, cooks and other personnel in preparing, cooking and presenting food.
    2. Ensures that quality Europe culinary dishes are produced and served in a timely, cost-effective and flavorful manner and to see that any problems that arise are rectified.
    3. Enforces food quality standards, freshness and all food items prepared are in accordance with the menu specification and hygiene and safety standards of the company.
    4. Assists in the development and implementation of new products in the hot kitchen europe cuisines.
    5. Carry out close supervision and inspection through all the production sections in hot kitchen processes and staff and report findings thereby ensuring that personnel kitchen meets the production deadline to avoid any delays for the airlines or events catering.

     

    REQUIREMENTS

    1. Extensive experience minimum of three (3) year’s in 4 star kitchen or airline/inflight catering with demonstrated hands on experience in Hot Kitchen.
    2. Candidate must have very strong background of Europe Culinary.
    3. Minimum Diploma in Hotel / Catering Management or equivalent qualification.
    4. Strong planning and organisational skills with the ability to multi-task and manage time effectively.
    5. Ability to work and perform under significant pressure.
    6. A professional manner with the ability to meet targets and achieve results multiple deadlines in a fast faced environment.
